Ever made brownies and wished you could have all the corner pieces? Instead of buying an expensive all-edges pan, why not try this easy recipe for the same crispy edges—and even better taste! These 3-ingredient cookies are rich, chocolatey, and chewy with the perfect crispy edges. The best part? You can add any mix-ins to make them your own! Try dehydrated marshmallows for a Hot Cocoa Brownie Cookie, graham crackers and mini marshmallows for a S’mores Brownie Cookie, or keep it simple with candy like M&Ms, mini Reese’s Cups, or chocolate chips. You can even add flaky salt to the regular base cookie to make a Salted Brownie Cookie! There are so many ways to make them!

Recipe
Yields 24-26* cookies
Base Cookie Ingredients
- 1 Box of Brownie Mix (Milk Chocolate*, 18.4 oz)
- 1/2 cup vegetable oil
- 2 eggs
Cookie Mix-In Combos
For each box of brownie mix, I recommend using about 1/4 cup of mix-ins, but feel free to add as much or as little as you like!
- Candy Goodness: Add mini M&Ms, mini Reese’s Cups, or any candy you prefer.
- Salted Caramel Brownie: Use caramel baking chips (I love Kraft Caramel Bits) and sprinkle flaky salt on top after baking.
- Salted Brownie: Simply sprinkle flaky salt on top after baking for a touch of salty goodness.
- Hot Cocoa Brownie: Add dehydrated marshmallows, and if you like peppermint, toss in some crushed candy canes for extra flavor.
- S’mores Brownie: Mix in broken graham crackers and mini marshmallows for that classic s’mores taste.
Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper or spray them with nonstick spray.
- Make the base cookie: In a large bowl, combine the box of brownie mix, eggs, and vegetable oil. Stir with a spatula until the dough comes together and has a thick consistency.
- (Optional) Add your mix-ins: Gently fold in your choice of mix-ins.
- Form the cookie balls: Use a cookie scoop or spoon to scoop about 2 tablespoons of dough and roll it into a ball.
- Place the cookie balls on the baking sheets, arranging them in 4 rows of 3. If you have extra dough, place the remaining balls in any empty spaces or line a second baking sheet. The cookies will spread, so leave space between them.
- Bake: Bake for 8-10 minutes, or until the edges are set.
- Let the cookies cool on the baking sheets until they firm up.
- Serve and enjoy!
Note: You can use any flavor of brownie mix for these cookies. If you make smaller cookies, adjust the baking time to avoid overbaking.
