No pasta here! Much like our Kitchen Trash Mix, this cookie idea came from trying to use up a few leftover ingredients in the pantry. With Christmas around the corner and Elf on my screen, I was inspired to make something full of fun flavors – something Buddy the Elf would definitely approve of. That’s how Buddy the Elf’s Breakfast Cookies came to life.
This recipe starts with the same soft, chewy base as the Cake Mix Cookie we love from Beth at The First Year Blog, but it’s loaded with playful mix-ins that add layers of texture and sweetness to every bite.

Recipe
Yields about 10 cookies
Base Cookie Ingredients
- 1 box of yellow cake mix (15.25 oz)
- 2 eggs
- 1/3 cup vegetable oil
- 1 teaspoon of cinnamon
- Random Mix-Ins:
- Red & Green Mini M&Ms
- Wavy Potato Chips pieces
- Mini Pretzel pieces
- Butterscotch morsels
- Red & Green Sprinkles
- Buddy the Elf’s Maple Syrup Grahams (Goldfish)
Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper or spray them with nonstick spray.
- Make the cookie dough: In a large bowl, mix the yellow cake, eggs, and vegetable oil. Stir with a spatula until the dough comes together, though it will be slightly soft.
- Add the mix-ins: Fold in the m&ms, potato chips, pretzels, butterscotch morsels, sprinkles, and maple syrup grahams*
- Form the cookie balls: Use a cookie scoop or spoon to scoop about 2 tablespoons of dough and roll it into a ball.
- Place each cookie ball on the baking sheets, arranging them in 4 rows of 3. If you have extra dough, place the remaining balls in any empty spaces or line a second baking sheet. The cookies will spread, so leave space between them.
- Bake: Bake for 8-10 minutes, or until the edges are set.
- OPTIONAL: Press more of the mix-ins into each cookie to make them look more festive.
- Let the cookies cool then serve and enjoy!
Note: Feel free to use any mix-ins you’d like and the amount you use is up to you. Just be sure to have a good balance of mix-ins to cookie dough. I just use enough to ensure each cookie has some of everything I’ve added.
