Rocky Road cookies, coming right up! This flavor was requested by one of our TREAT$ Voucher recipients, and we couldn’t resist making it happen. Funny enough, we’ve never actually tried Rocky Road ice cream before – so a little research was in order!
This cookie was a last-minute addition to their custom meal, but we’re so glad we went for it. It turned out rich, chocolatey, and full of texture thanks to the gooey marshmallows, crunchy sliced almonds, and melty milk chocolate chips. We used our classic brownie mix base as the foundation and simply folded in the Rocky Road-inspired mix-ins.
It’s already delicious, but we’re excited to keep experimenting with this one – next time we’ve got a few ideas to elevate it even more. Stay tuned!

Recipe
Yields 24-26* cookies
Base Cookie Ingredients
- 1 Box of Brownie Mix (Milk Chocolate*, 18.4 oz)
- 1/2 cup vegetable oil
- 2 eggs
Rocky Road Mix-Ins
Feel free to add as much of each ingredient as you want!
- 1 oz sliced almonds
- ½ cup milk chocolate chips*
- ½ cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper or spray them with nonstick spray.
- Make the base cookie: In a large bowl, combine the box of brownie mix, eggs, and vegetable oil. Stir with a spatula until the dough comes together and has a thick consistency.
- Add your mix-ins: Gently fold in the chocolate chips, sliced almonds, and mini marshmallows.
- Optional but recommended: Chill your dough in the fridge for at least 30 minutes before baking to help prevent spreading and keep your cookies thick and chewy.
- Form the cookie balls: Use a cookie scoop or spoon to scoop about 2 tablespoons of dough and roll it into a ball.
- Place the cookie balls on the baking sheets, arranging them in 4 rows of 3. If you have extra dough, place the remaining balls in any empty spaces or line a second baking sheet. The cookies will spread, so leave space between them.
- Bake: Bake for 8-10 minutes, or until the edges are set.
- Let the cookies cool on the baking sheets until they firm up.
- Serve and enjoy!
Note: You can use any flavor of chocolate chips or nuts for these cookies. If you make smaller cookies, adjust the baking time to avoid overbaking.
