We all love Chocolate Eclair Cake, but have you ever thought about trying a Strawberry Eclair Cake? The idea popped into my head one day, so I started looking for recipes before I tried making it myself—because, let’s face it, sometimes the best recipes are already out there!
After a bit of searching, I didn’t find exactly what I was looking for, but I did find some recipes with similar ideas. So, I decided to mix a few things together. This Strawberry Eclair Cake combines the crunchy, sweet layers of a strawberry crunch cake with the creamy graham cracker and pudding layers from the classic chocolate eclair cake. The result? A DELICIOUS dessert that some people say tastes just like a strawberry milkshake!
It’s as delicious as it sounds, and I can’t wait for you to try it. It’s the perfect mix of creamy, crunchy, and fruity goodness!

Recipe
Serves 10-12 people depending on your serving size.
Ingredients
- 3 boxes of vanilla instant pudding (3.4 oz box)
- 6 cups of milk* (for the vanilla instant pudding)
- 16-oz whipped topping
- 2 boxes of strawberry Jello
- 1 family pack of vanilla sandwich cookies
- 2 packs from a box of graham crackers
- 1-2 jars Smucker’s Strawberry Topping*
- 1.5 stick of melted unsalted butter
- (OPTIONAL) fresh strawberry slices
Instructions
- Layer 1: Pudding Mix
- Set out your whipped topping to soften
- Make your vanilla instant pudding using the box’s instructions
- Once the pudding is ready, mix the pudding and the softened whipped topping until combined
- Layer 2: Strawberry Crunch
- Crush up your graham crackers and vanilla sandwich cookies
- Combine the crushed cookies, crushed graham crackers, and the strawberry jello packs
- Melt the butter
- Add your melted butter to the cookie mixture and combine well
- Set aside ½ cup of the cookie mix for the top*
- Take out your serving dish and spread ¼ cup of pudding mix on the bottom
- Start layering!
- Sprinkle a layer of the cookie mix on top of the pudding layer
- Add a pudding layer on top
- (OPTIONAL) Add your strawberry slices
- Repeat the layers steps until all pudding is gone! Be sure to make sure your strawberry slices aren’t the last layer you add. You want the last layer to be the pudding mix before proceeding with the rest of the recipe.
- Sprinkle the ½ cup of cookie mix* you set aside on the top
- Warm up your jar(s) of strawberry preserves and pour across the top
Note: I use Lactose Free milk when preparing the instant vanilla pudding but you can use any milk you’d like. You can use any brand of strawberry preserves or dessert topping you like! Chill overnight or if you want the extra crunch eat immediately! Feel free to add as much cookie mix and pudding to each layer as you like! As you can see in the pictures above, I’ve experimented with different amounts of topping, including how much strawberry preserves to spread on top. It’s all about making it to your taste!
